Desserts, desserts and more desserts! We were actually more excited in the dessert segment. We feel that we can play more in this food category. Besides, who do not heart sweets? Definetely, not this lot!
Food Styling or Food Plating is defined by Chef Anna as the way "how food is arranged on a plate and garnished. It is here where a plate of food is treated like a painting and the rim of the plate is frame". The cook or chef is encouraged to create the "artist" in him. There are three important elements in Food Plating. One, is the proper selection and cooking of food. Next, is the plate selection and last, the equipment.
In Food, the color, shape, size and texture will play vital roles. It's necessary to think of different accompanying colors and possible cuts in one thousand and one ways. Just bear in mind that meats and poultrys have their own standard cuts, it would be better to play more on hard vegetables. What is key, is to achieve variety and balance. On cooking the food, basic rules must come like a mantra.
Meats - tougher parts (muscled / exercised) must be cooked in moist heat. Less exercised parts are normally cooked in dry heat (e.g. pan-frying).
Poultry - white meat cooks faster than dark meat. Fry skin-down, high heat at first then low on the other side until the juice that comes out is clean.
Seafood - it's cooked as soon as it turns pink. Boiling is a no-no, just simmer.
Vegetables - must be crisp and tender. Cook one at a time. Pre-cooking or blanching is used as a normal technique.
Pasta and other Starches - cook aldente meaning "to the tooth". Wash the cooked starch immediately and oil it a little.
Sauce - use just to enhance not key.
Garnish - anything to enhance the look of the food but should always be edible and tied up with the dish. The size must be just right (not too small not too big) enough to be mixed and eaten with the food.
On Plate Selection, white is the basic and the best available. "It provides a clean and unobstructed canvass for food. The important rule is to not overcrowd it. Again, don't make it too busy!" It should be multidimensional also, add some height etc. The most common technique is to clock it. Usually, the starch is placed at ten o'clock, vegetables at two o'clock and proteins at six o'clock. It will add more drama if a focal point of the meal is created. Moreover, a concept of geometric contrasts will provide a good arrangement and presentation. Slight mess is allowed but must be controlled. Generally, the rule of thumb is to make it simple and realistic. This is where the artist in the cook/chef will play a substantial role.
On Kitchen Tools, the basic must haves are butchers knife (for meats), Chef's Knife (for all kinds of chopping), vegetable knife (for peeling), serrated knife (for bread and some fruits), filleting knife (for fish) and meat fork.
The idea of Food Plating left a very stimulating experience in me. Now, I find it an integral part of the food itself. Who would be enticed to dig into a plate that presents a food in its utter mess look? Of course, we all want that impression of delicate cooking onto our food. Inevitably, the manner it is presented reflects much of how it's cooked and prepared. Thus, at the very least the food presentation must exude all delightful culinary senses to last down to the very end of the bite. The challenge therefore is to create innovatively like a scientist do. Cook, the finest chef way and work like the greatest painter of all times. There will be no reason then for the plate to be left untouched.
Creamy Vegeroni Pasta Primavera
Ingredients:
½ of 375g-vegeroni pasta, cooked according to package directions
300 g boneless chicken breast, cut into chunks
4 tbsps canola oil
2 tbsps butter
4 cloves garlic, minced
1 large carrot, julienne
1 bulb white onion, cut into chunks
1 pc red bell pepper, cut into chunks
1 pc green bell pepper, cut into chunks
1 small zucchini, sliced into chunks
1 tetra pack all purpose cream
½ cup grated parmesan cheese
salt and pepper to taste
½ cup pasta water
Procedure:
1. Cook Vegeroni Pasta according to package directions. Drain and set aside. Save about ½ cup of pasta water.
2. Season chicken with salt and pepper. Pan-fry in canola oil until slightly brown. Set aside.
3. Melt butter on the same pan and sauté garlic until light brown in color.
4. Add vegetables and cook until tender. Put first the ones longer to cook.
5. While vegetables are cooking, pour all-purpose cream and reserved pasta water in a saucepan. Add parmesan cheese and simmer on low fire until thick. Season with salt and pepper.
6. Add cooked chicken and pasta to the vegetables. Mix well.
7. Pour cream sauce over pasta and vegetable mix and stir well to coat evenly. Serve hot.
The use of vegeroni pasta made the dish colorful and looked more inviting for the kids. It also perfectly matched the "pasta primavera" concept which normally consists of pasta and vegetables.

The heart and soul of this garden's visit is of course the delightful cuisine that is genuinely Sonya's. It's a complete meal that will leave you happily stuffed yet guiltless of other noxious food elements. We started our feast with the appetizing homemade dips matched with perfectly baked sesame bread. I personally liked the bread, crispy on the outside, soft and velvety inside! Creamy and tasty, we asked for a refill right away. For the dips, my favourites are pesto, white cheese and creamy mushroom. I find the anchovies and tapenade a little salty. The green salad is superb and scrummy! The leaves are so fresh, sweet without any bitter after taste. (I think that's what you get from an organic produce) Although the pineapple is a little sour, the rest of the toppings are just right to make a mouth watering salad mix. The pasta is also a winner. With the salmon belly as topping, I'll definitely savour it. All three sauces (sun dried tomato, chicken cream with mango and ratatouille) complemented the linguine. With the birth of its own Panaderia, guests will get to enjoy more baked goodies at Sonya's. Hence, a moist, rich chocolate cake was added in the dessert repertoire along with unrivalled traditional filipino delicacies such as glazed sweet potato and banana rolls. The freshly squeezed dalandan juice is still ever refreshing down to the last drop. What's more, an all natural, calming tarragon tea is served last. Just perfect to harmonize all gustatory notes left in your palate ending a memorable gastronomic feast.
The next must try is the Cottage B&B (bed and breakfast). There are a total of 16 rooms, 12 cottages located further down the garden. It's open all year round with the prevailing rates of Php 3000 per pax (inclusive of vat and service charge) on weekdays and Php 3400 per pax (inclusive of vat and service charge) on weekends and holidays. Package rates include complimentary dinner or lunch and full breakfast with a bonus evening serenade.
I find the rooms very traditional with an old feel yet classy. The beds are also spacious and neatly done. The ambiance is laid-back, not picture perfect but invigorating and serene. Just right for a peaceful hideaway.
True to its claim, Sonya's Garden has sucessfully transformed into a wholly refined awe-inspiring retreat for all the senses.

Food is one thing that will undoubtedly connect people around the world, whether it be prepared in a lavishly styled and most modern kitchen or in the simplest and humble food cart. We’re all assured that each has its own genuine offering and sensory experience. The only thing that will matter is whether it will leave a tasteful memory in our palate or not. Being adventurous though, is an indispensable spice of any food journey.

Shopping is one thing that Taiwanese's heart to do. A living proof to that is the enormous number of shopping malls and traditional markets found in the country. In Taipei, the most popular, biggest and most varied is the - Shilin Night Market. It is Taipei's premier night market that lures crowds (massive on weekends) with affordable eats and great bargains. Think of shopping and eating at the same time! Clothing, shoes, accessories, leather goods and other bric a bracs, name it they have it! It is common to find stuffs priced at NT$100. But bargains such as these including those tagged with a specific price are hardly negotiable (take it or leave it). If you're on a budget and have a long "pasalubong" (gift) list, this is the place to be!
The newest, fashionable shopping mall built in Taipei, is the Breeze Center. It is located in Sec. 1, Fuxing Rd., 5 minutes walk from the intersection of Civic Blvd. and Fuxing South Road. It is a high end mall where international brands are abundant. This is where Taipei's Fashionistas shop. Do check the ladies room in this mall, simply amazing! The ambiance looked more of a hotel room rather than a comfort room. There's even a big flat screen TV inside the CR that shows episodes of Fashion TV. How else fashionable can it get!? What I personally liked in this mall, is the food court at the basement area. You'll feast on real good tasting, affordable meals. By the way, I noticed that it's dominated by Japanese Food Stalls. It is here where I tasted a very affordable, authentic Udon Noodles. I can't help but wished that the same food selection be offered in our own shopping malls in the Philippines. Great food, superb ambiance at a reasonable price!
Very near to our hotel is Taipei's most popular department store - SOGO. It is conveniently located near an MRT station (both the old and the new one; Zhongshiao Rd.). I was a bit surprised when I learned that this mall has 13 floors to roam around. Whew! However, if it's not sale season, things are a bit pricey here. Thus, if you would like to stick to your budget, go to the night market instead.
At the basement of Taipei's landmark (Taipei 101) is a shopping mall. There are 5 levels that house plenty of upscale boutiques and bookstore (Page One). There's a good toy shop as well. If you're in search of great international brands, hop on to this elegant mall.
High volume and low cost is the mantra at this next shopping area. WufenPu, is Taipei's version of Bangkok's Pratunam. The entire place is filled with narrow alleys showcasing diverse, fashionable garments and leather goods. Great bargains are offered for wholesale purchases.
Another cheaper alternative for shopping is the Underground Mall. Some subway stations have shops underground that sell various items at relatively lower prices compared to ordinary shopping malls. We found a store that sells shoes for NT$200 only, really good deal!
If you're looking for electronic or computer goods, Guanghua Computer Market is the must visit place. You'll find great deals of all things related to computer. If you're lucky, you'll even get freebies from your purchases. It would be better to compare prices from different stores to be able to get the best deal.
What else will top the Taiwan must visit list other than TAIPEI 101?! As they say it, you've never been to Taiwan if you never set foot on this towering landmark. Pending the completion of Burj Dubai, it is still the World's tallest building to date. Given that this breathtaking Skyscraper was built by a country as small as Taiwan, to say that this has been a remarkable achievement by the Taiwanese is still an understatement. Taipei 101 epitomizes the vigour and intellect of Taiwanese expertise. Truly deserving of world's recognition and a traveller's respect. The first time my eyes laid on it, I was seized in absolute awe! Further, when I got inside, the marvel and grandeur of its beauty made me astounded! It's as if the city found a powerful yet elegant shield.
The next must see landmark is the Memorial Hall of Taiwan's great political ruler Chang Kai Shek. It's now known as the National Taiwan Democracy Memorial Hall. The big monument for the former president is situated in a wide, agreeably well landscaped courtyard. Since it's nearing winter time, the cool breeze and serene ambiance set the mood for lazing around.
The Chinese Garden with a nice Koi Pond inside the Park, is another spot to idle away at. It's so picturesque here! There's even a vending machine for feeds near the pond for those who would like to feed the Koi Fish. (That's Taiwan's animal welfare for you!)
Other than that, Taiwan is also known for comforting "hot springs". Although most are located on the outskirts of Taipei and remaining provinces, it's not difficult to find a restful one within or near the city. If you want to be relaxed, dip into one of Taiwan's natural bathhouses.

The Taiwan International Chain Stores for instance, showcased the emerging players in the segment but not limited to foods alone. However, still the apparent giants are 7-eleven and McDonalds.
Health and wellness is the name of the competition. A lot of products promoting health and vitality are very visible and popular. Replenish.., refresh.., restore.., re-young! These are becoming the mantra in this country.
In the Tea, Coffee and Wine Hall, you will feast on the delightful taste and aroma of warming beverages. Most Teas present in the trade fair were produced in Taiwan, Japan and China. Coffee products on the other hand, were made from Europe (Italy, Germany), America(Columbia, Honduras, etc.) and Asia (Singapore, Malaysia, Indonesia). Green Tea is largely seen as more popular than Black or Oolong Tea. By the way, Tea here is elevated into a higher level. Promoting it doesn't stop from merely providing an appealing taste and aroma. From the finest tea cups to the right choice of concoctions, everything must be delicately taken cared of. From a visitor's point of view, it's like being transported to a homey tea house with the ambiance of natural tea landscapes. It's having a "complete tea experience" that exhibitors are trying to communicate. It is a culture that is worthy to share. Suffice it to say, most tea products came in natural, dried leaves form. Instant, powdered type is hardly visible. Likewise, it's more for end-user consumption rather than for further commercial processing. On Coffee trends, increasingly being well liked is the one with "no raw sugar" claim (2 in 1). Taste is strong and bold. It's under the brand name CAFE 21 made in Malaysia.
Among the few that offered commercial tea products for instant consumption is the KING KUNG HEALTH FOOD CO., LTD. They claim to have nutritional at the same time good tasting tea drinks. Some of the products we sampled which we found true to their claims were smoked plum soup, brown rice tea, ginger tea, burdock tea, taro coconut milk, maple syrup milk tea and ten grain nutritional tea.
Other products we also found promising when made available in an up and coming health and wellness driven market like the Philippines, are these Herbal Crackers and Vital Balance Biscuits. We noticed their high acceptability among Taiwanese. It only proved then that taste and health can complement each other in a finished product.
